Swiss Cheese Chicken

or Patty’s Chicken as it is known in our house, but I thought I would give it a name that reflected the deliciousness that is in it! If you have never made this then you need to make it. We had it last night and it is delicious, another family favorite.

Ingredients
-4-6 boneless chicken breasts (for the 6 of us my mom would cut three in half)
-Swiss Cheese slices (6 or more, it’s your choice)
-1/4 cup white cooking wine
-1 can cream of chicken soup
-1 cup Pepperidge Farm Herb Stuffing Mix (I use the one that is the blue and white bag)
-1 stick margarine, melted

Directions
-Grease or spray baking dish
-Place chicken in dish and lay swiss cheese slices over to cover
-Combine white wine and soup on small bowl; spread over cheese
-Sprinkle stuffing mix over top
-Drizzle melted margarine over top
-Bake at 350 for 45 minutes, uncovered

When my mom makes it we have it over mashed potatoes and it is delicious. I don’t ever have the time to make homemade mashed potatoes and I don’t care for the taste of instant mashed potatoes, so last night we had it over rice and that was delicious. It makes a delicious creamy sauce to go over the rice or mashed potatoes. It is also good with broccoli for the vegetable.

Easy Spaghetti Casserole

This is a really easy recipe I have in my recipe book from my mom. Its pretty straight forward and it’s delicious.

Ingredients

1 lb. cooked spaghetti
16 oz. Sour Cream
16 oz. Spaghetti Sauce with our without meat
Garlic salt to taste
Chives to taste
1 cup Cheddar Cheese

Directions

In a 9×13 buttered pan, place cooked spaghetti.
Sprinkle spices, then layer sour cream, then sauce, then cheese.
Warm on 350 until cheese melts and casserole is warm.

It’s just a delicious, easy casserole for a little bit of a different twist on spaghetti. I used more than the called for 16 oz. of spaghetti sauce because I like mine to be more saucy. But you can pretty much do that however you like it. We had green beans and applesauce with ours and then it makes plenty so the second night we had corn and applesauce with it!

Yummy Pineapple Casserole

Pineapple, Cheese, and Ritz Crackers. Can you say YUM! That’s what I say whenever I think about this side dish. It is a family favorite and we had it the other night with our Poppyseed Chicken Casserole. I got this recipe from my mom.

Ingredients

2 (2o oz) cans pineapple chunks, drained
1 cup sugar
6 T. flour
6 T. pineapple juice
2 cup grated cheddar cheese
1/2 cup of melted butter
1 cup Ritz Cracker crumbs

Directions

1. Butter Casserole Dish
2. Mix together sugar, flour and pineapple juice
3. Pour into casserole dish
4. Spoon pineapple over mixture
5. Cover with grated cheese
6. Mix crumbs and melted butter together and sprinkle over cheese
7. Bake at 350 got 45 minutes

-This recipe can also be halved and baked for 25-30 minutes. I usually halve it when I am making for just Tyler and myself. It would be enough for 4 people when halved.

Poppyseed Chicken Casserole (sans Poppyseed)

So how many of you have had Poppyseed Chicken Casserole before? I’m sure a lot of you have had one version or another. If not then you need to try this casserole! It is delicious! I didn’t have my moms version so I used one I found online and changed a couple of things, including the fact that I didn’t have any Poppy seeds so that kind of negates the name but its basically still the same.

Ingredients

2 Chicken Breasts, cooked and chopped

1 can Cream of Chicken Soup

16 oz. Sour Cream

1 roll of Ritz crackers, crushed

1 stick of butter, melted

Instructions

1. Boil chicken until done and then chop up

2. Combine chicken, cream of chicken soup and sour cream

3. Spred mixture in a lightly greased casserole dish

4. Melt butter and then mix in crumbled crackers

5. Spread cracker mixture over chicken mixture

6. Bake at 350 for 35-40 minutes or until bubbly and hot

So that is the way that I made it. It turned out delicious and we always eat it over rice. It is an easy, delicious comfort food. Enjoy!

Pizza Casserole

I made this recipe this week for dinner. It is one that my mom used to make a lot on Wednesday nights before church because it is so easy! I prepared the ground beef mixture on Monday when I was prepping my meals for the week. I put that in the fridge and then got home on Thursday night and threw the rest together in about 10 minutes. My husband was standing there watching me and when I put the crescent rolls on he went “OH now I know what you are making, I love this!”

Pizza Casserole

1 lb. ground beef
1 cup onion chopped (I usually leave this out because I hate chopping onions)
1 (8oz) can tomato sauce
1 (1 oz) package spaghetti sauce mix
1 (8oz) package mozzarella cheese slices
1 (8oz) carton sour cream
1 (8oz) can crescent rolls

Brown ground beef and onion
Add tomato sauce and spaghetti sauce mix
Spread in pan and cover with mozzarella cheese slices
Cover with sour cream
Cover with crescent rolls
Bake at 375 for 20 minutes

and voila you have a delicious, easy dinner!
