Creamy Crock Pot Spaghetti

Pasta + a crock pot = YUM! Two of my favorite things and it was delicious. I found this recipe and just knew I had to try it out. I did it a bit different then the recipe and it was delicious. So here goes!

Ingredients:
1 26 oz jar Spaghetti Sauce (I used Ragu)
1/2 lb angel hair pasta
1/2 ground beef
1/4 cup parmesan cheese
2 oz. cream cheese

Directions:
Brown the ground beef and drain fat
Pour half the jar of spaghetti sauce into the bottom of the crock pot
Place uncooked pasta noodles on top of the sauce, break the noodles so that they fit
Pour ground beef over the pasta
Sprinkle 1/4 cup of parmesan cheese
Cut cream cheese into cubes and place on top
Cover with the last half of the jar of spaghetti sauce
Cover and cook on high for 3 hours
After 3 hours, stir it, it will be thick. Mine I thought was delicious and needed nothing more added but if you found it to be too dry then you could pour more sauce on it.

This is the recipe, there were additional steps and ingredients to add that I did not do because I thought it tasted fine after doing this. The link to the recipe I adapted this from is below. The only problem I encountered were that some of the noodles stuck together. I am not sure what would have prevented this? Maybe cooking it longer on low rather than on high or maybe being home to stir it? But since this is a crock pot meal I don’t want to have to do anything to it during the day. But it made a lot and for the two of us there were plenty of delicious noodles that hadn’t stuck together. Does anyone have any thoughts on how to prevent the noodles from sticking together?

This was a yummy, easy meal and the cream cheese really added something creamy and yummy to regular old spaghetti. And in the crock pot, win win! I hope you all enjoy this meal!

Yummy Pineapple Casserole

Pineapple, Cheese, and Ritz Crackers. Can you say YUM! That’s what I say whenever I think about this side dish. It is a family favorite and we had it the other night with our Poppyseed Chicken Casserole. I got this recipe from my mom.

Ingredients

2 (2o oz) cans pineapple chunks, drained
1 cup sugar
6 T. flour
6 T. pineapple juice
2 cup grated cheddar cheese
1/2 cup of melted butter
1 cup Ritz Cracker crumbs

Directions

1. Butter Casserole Dish
2. Mix together sugar, flour and pineapple juice
3. Pour into casserole dish
4. Spoon pineapple over mixture
5. Cover with grated cheese
6. Mix crumbs and melted butter together and sprinkle over cheese
7. Bake at 350 got 45 minutes

-This recipe can also be halved and baked for 25-30 minutes. I usually halve it when I am making for just Tyler and myself. It would be enough for 4 people when halved.

Give me some more, Spaghetti Amore!

 

I FINALLY remembered to take a picture of this meal. I set an alarm in my phone and everything. This is one of my favorite casseroles and it is a comfort food for me because I got this recipe from my mom. It is delicious and easy. I hope you enjoy this as much as I do.

Ingredients:
1 lb. ground beef
1/2 cup chopped onion (Once again I always leave out onion)
1 cup shredded cheddar cheese
1 can cream of mushroom soup
1 can tomato soup
1 can water
1 minced garlic clove (or garlic powder)
1/2 lb. spaghetti

Directions:
Brown beef and onion
Add soup, water, garlic- heat
Blend in 1/2 cup of cheese and cooked, drained spaghetti
Pour into 3 quart casserole dish and top with remaining 1/2 cup of cheese
Bake at 350, uncovered for about 30 minutes or until bubbly
Serves 4-6
Can be frozen and reheated

Simple Crock Pot BBQ Sandwiches

So this recipe is so easy some of you might laugh and say I don’t even need a recipe for this. And then some of you are like me and you are like instructions, thank goodness! This is a simple, delicious crock pot recipe for Pork BBQ Sandwiches. It’s so easy and so good! I got this recipe from my Aunt Kay after having it at her house many times.

Buy a pork loin (boneless).
Put pork in crockpot. Add a couple bay leaves and a cup or 2 of water (The water is just to keep the meat from sticking – you are going to drain it later).
Cook for 6 to 8 hours on low. Meat will pull apart easily with a fork when it is done.
Drain water from meat and discard bay leaves and water.
Pull pork – or chop.
Return pork to crock pot.
Add bbq sauce and re-heat.

See? So simple! I love being able to come home to a meal in the crock pot. We had this last week and it was delicious. Per usual, I forgot to take a picture but it looks like any other bbq sandwich and I will add one next time we have it. I use honey bbq sauce but that is my personal preference. It will be good with any sauce of your choosing! Enjoy!

Winter Comfort Food

I have found a new recipe and it is delicious and perfect for a cold winter night! And a bonus is that it’s in the crock pot and so easy when you are on the go. This is a recipe I found on Pintrest and the credit goes to the Like Mother Like Daughter blog. So I can’t take credit for this delicious recipe but a big thank you for this one! I would eat it every week if my husband let me get away with it, and he usually does 🙂

Creamy Chicken and Broccoli over Rice

3 chicken breasts
1 can of cheddar cheese soup
1 can of cream of chicken soup
1 1/2 cups chicken broth
1 tsp salt
1 tsp cajun seasoning
1/4 tsp garlic salt
1 cup of sour cream
2 cups of broccoli

1. Put everything except sour cream and broccoli in the crock pot.
2. Cook on low for 6 hours or on high for 4.
3. Shred the chicken breasts with two forks.
4. In a rice cooker (or however you like) cook about 4 cups of rice.
5. Meanwhile, add broccoli to the crock pot and stir in.
6. Cook for another 30 minutes.
7. When done cooking, stir in sour cream with the crock pot mixture.
8. Enjoy over a bowl of rice

The only things I have done differently is I use less chicken because there is just two of us and one time I tried to go by memory and used 1/2 cup of chicken broth instead and it turned out just as good just a little bit creamier. This is a delicious, easy meal! Enjoy!
